Grilled oyster mushrooms have a satisfying, tender texture and a deep, savoury flavour. Their broad, folded shapes make them an inviting addition to an Italian antipasti plate, especially beside olives, cheeses and fresh bread.

Pile them onto toasted sourdough or focaccia, add to a pizza, or serve beside roasted vegetables. For a simple lunch, try them with warm cannellini beans, parsley and a squeeze of lemon.

Known in Italian as funghi pleurotus arrostiti, they bring the character of grilled vegetables to a table made for sharing.
